For the production of Strudel with apples, the highest grade flour, vegetable oil, eggs, salt, apple jam, almonds, cinnamon, granulated sugar, raisins are used.
Test Preparation.
For kneading dough, take 20% water (based on the amount of flour). Humidity kneaded dough - 29 — 31%.
Preparation of the filling.
The filling is prepared of two types: one of raisins, sugar and cinnamon, the other - from apple jam and almonds. Almonds must be peeled, dried and crushed.
Cutting test.
The finished dough is divided into portions of 0,2 and 0,1 kg, which are first rolled into buns, then rolled into layers of thickness 1 — 3 mm. The rolled dough sheets are placed on sheets of tinplate in several layers, lubricating each new layer with vegetable oil.
For the upper and lower layers, layers of 0,2 kg are used, for medium ones, of O, 1 kg. The resulting intermediate product is cut into pieces in the form of rhombic. The cut product consists of 24 layers, including two layers of filling consisting of raisins, sugar, cinnamon and two layers of filling consisting of apple jam and almonds.
The surface of the product is sprinkled with sugar.
Baking and packaging products. Apple strudel is baked at 160 — 200 ° С for 25 — 30 min. After cooling in the workshop room, the product is packaged.
