Lent is primarily a time of spiritual cleansing. However, physical cleansing is also very important. For this, it is necessary to draw up the correct diet. To make things easier, here are some delicious fasting snack recipes.
First of all, we are talking about vegetables, from which it is easy to create dozens of lean snacks. Among them, of course, also includes potatoes, and not necessarily only boiled ones. Soak 5-7 potatoes for 10 minutes in boiling water. Add 2 tbsp. l. olive oil, 4 lightly mashed garlic cloves, 1 tsp. caraway seeds and 1/2 tsp. rosemary. When the potatoes have cooled down a little, we lay them out on several sheets of foil, wrap them in the form of bags and leave at room temperature for 2 hours. Then we send them to an oven preheated to 200 ° C for 15–20 minutes. You can serve the snack directly in the foil, slightly opening the edges of the bag.
Eggplants are also great for making all kinds of snacks. But lean caviar is especially tasty. To begin with, cut 2-3 eggplants and 1 zucchini in half lengthwise, place them on a baking sheet with foil, cut them up and put them in the oven to bake for 30 minutes at 160 ° C. Let the vegetables cool down, peel them off and cut into small pieces. Chop finely and add to them 2 tomatoes, 2 sweet peppers of different colors, 2 onions, salt and pepper to taste. We put all the ingredients in a blender bowl, grind until smooth or to a salad state - to your taste - and season with sunflower oil. Such caviar can be served with slices of rye bread.
Hummus our way
Hummus is a very popular snack in Middle Eastern cuisine and is a thick chickpea paste. It can be adapted for our menu and made quite tasty fast food. To do this, we need 2 cans of canned white beans, 350 g each. Drain the liquid and mix the beans with 3 cloves of garlic passed through a press, a chopped bunch of cilantro, juice of half a lemon, 3 tbsp. l. olive oil and a pinch of pepper. Using a blender, beat all the ingredients into a homogeneous puree. This pasta goes well with slices of fresh tomatoes, cucumbers, sweet peppers and leaves of Armenian lavash dried in the oven.
Mushrooms will always come to the rescue if you need to cook a lean and tasty dish in a hurry. Stuffed mushrooms are a safe bet for such an occasion. We take 6-8 large fresh mushrooms, carefully remove the legs and rinse thoroughly under cold water. Next, we make a vegetable filling for mushrooms. Dice a fresh tomato, half an avocado, a third of a red bell pepper and mix all the ingredients. We fill the resulting mixture with 1 tbsp. l. soy sauce with crushed garlic clove and stuff the mushroom caps with it. Bake the appetizer for 10-12 minutes at 160 ° C. Garnish with sesame seeds and cilantro leaves before serving.
Pumpkin is another versatile vegetable that allows freedom of culinary creativity. It contains a lot of nutrients, which is extremely important with limited nutrition. I am especially glad that you can eat pumpkin fresh, adding it to various salads. Grate 500 g of pumpkin pulp on a coarse grater. Peel 4 small sweet apples, remove the core and also grate. Grind a handful of walnuts in a mortar or using a rolling pin. Mix all the ingredients in a bowl, pour over the juice of one lemon and add liquid honey to taste. Let the salad brew a little and serve it to the table.
Do you want to cook deliciously in Lent? Use beets for your meals. Among other advantages, it promotes better absorption of vitamins, and also reduces appetite. This wonderful root vegetable can be used to make delicious caviar, lean soups and, of course, various snacks. Boil two small beets and grate them. Add 200 g of chopped orange pulp, 100 g of arugula. It remains to fill the salad with 2 tbsp. l. vegetable oil, 1 tbsp. l. sugar, lemon juice to taste and serve.
The already mentioned walnuts can be used to create a variety of delicious snacks such as the Georgian pkhali. Soak 500 g of spinach in boiling water for just a couple of minutes, then put it in a colander and let the liquid drain. When the spinach has cooled, squeeze it by hand and chop finely. Then we pass 1 glass of walnuts through a meat grinder. Grind 2 cloves of garlic, 2 bell peppers, a bunch of cilantro and parsley. Mix all the ingredients, add 1/2 tbsp. l. wine vinegar, salt and suneli hops to taste. Combine the spinach with the resulting mass and put it in a slide on a plate. Before serving, pkhali can be garnished with pomegranate seeds. This dish can also be made with the addition of beets or beans.
