Mascarpone - you highlight your desserts

Gentle mascarpone cheese - one of the most delicious associations connected with Italy. It adds subtle notes of any dish, but is best suited for exquisite desserts.

The most delicate cheese

Mascarpone cheese, the taste and consistency of which resemble fatty sweet cream, is not similar to our usual cheeses. It was first cooked five centuries ago in Lombardy on the basis of buffalo milk cream. Today, mascarpone is made using the same technology, although it is already made from cow's milk. Well-heated cream with 25-35% fat is fermented with wine vinegar. As a result, the protein coagulates without any enzymes commonly used to make cheese. Fermented cream is hung in canvas bags in a cool place for 12-18 hours. During this time, all the serum flows, and in the bags remains a delicious creamy mass. Perhaps the only drawback of Mascarpone is its fragility. And because of the rich fat content, it is practically not eaten in its pure form, adding to various dishes. And yet, first and foremost, mascarpone cheese is the basis for desserts.

The most popular delicacy of mascarpone without exaggeration is tiramisu. Spread 250 g. Cheese in a bowl and whisk until thick consistency. Separately, beat the 2 yolk with icing sugar until a uniform white mass is formed and gradually introduce them into the mascaron. The remaining proteins are also whipped into a strong foam, add them to the mascarpone and mix well. We connect 200 ml of coffee with 4 Art. l rum and dipped in it cookies Savoyardi (30 pcs.). We spread a third of the impregnated biscuits on the bottom of the form and cover it with a part of the cream. Repeat the layers twice more and lubricate the top with the remaining cream. Align the shape of the cake and put it in the fridge, ideally for the night. The next day, sprinkle cocoa powder with tiramisu.     

Ravishing Cherry

Fresh berries perfectly complement dishes with mascarpone cheese. Recipes with such combinations are very common. We will make a cherry mascarpone cake. The first step is to knead a dough of three eggs, 150 g of sugar and the same amount of sifted flour. Then bake the round cake at 180 ° C for 20-25 minutes. Let it cool down and, without removing it from the mold, saturate it with cherry compote, and put the pitted cherries on top. While the cake is soaked, make an air cream. Whip heavy cream (250 g) with sugar (150 g) and gradually add 250 g mascarpone. Cover the cake with cherries with the resulting cream, sprinkle with grated chocolate and leave in the refrigerator overnight.

Strawberry heart

Mascarpone is also suitable for miniature desserts.

Mascarpone is also perfect for miniature desserts, for example, cakes with sweet fillings. In one bowl, mix 160 flour, 1 tsp. Baking powder, a pinch of soda and vanillin. In another bowl, grind butter (60) with sugar (150) and chicken egg, then pour in 80 ml of milk. We carefully mix the two parts and join them together. Fill the dough with the cake molds and bake them in the oven for 15-20 minutes at the temperature of 180 ° C. In the meantime, prepare the filling: whisk blender 1 st. Strawberries, 2 st. L. Powdered sugar and 150 mascarpone. Let's cool the ready cakes, make them a groove and use a syringe to fill them with cream.

Pancakes with an Italian accent

Pancakes are a traditional Russian treat, and yet they are perfectly combined with mascarpone cheese. The recipes for desserts in this case are complemented by interesting touches. To start, prepare the cream, beating it into the air mass 1 Art. cream with mascarpone cheese (125 g.). We send the cream in the fridge and make pancakes. Mix in a bowl 2 Art. flour, according to 2 Art. l sugar and dry cocoa, baking powder, soda and salt. In another bowl, combine 300 ml of milk and 100 of sour cream. Add here 4 Art. l coffee, 3 eggs, 4 Art. l melted butter and vanilla. Well, beat the resulting mass, enter the dry ingredients into it and knead the dough. You can add a little more flour to make it thicker. Next, we bake thick pancakes, lay them on a plate, greasing each cream. The resulting hill pancakes pour the remaining cream. 

Blueberry clouds

An open pie with blueberries and mascarpone will please the lovers of homemade cakes. We start, as usual, with the test. Mix 130 flour, 2 art. L. Sugar powder and add chilled butter, grated. We carefully knead the dough so that its consistency from crumbly turns into a supple and elastic. Transfer the dough into a greased baking dish, make a small groove on the entire surface for the filling and put in the freezer for 20 minutes. Then bake the cake in the oven at a temperature of 200 ° C until a golden crust appears. At the same time, we prepare the filling: mascarpone (250) is beaten with 4 st. L. Sugar powder, pinch of vanilla and add 300 g. Blueberries. Fill the pie with the filling and leave it to soak for several hours.
